Ingredients:
- 1 large zucchini or courgette
- 1/2 cucumber, sliced
- 2 tomatoes
- 1/4 onion, thinly sliced
- 1/2 cup spinach
- 1/2 Tbsp tahini
Directions:
- Peel the zucchini and compost the skins.
- Cut the squash in half, scooping out the seeds in the center and then dehydrate for 4-6 hours at 125℉.
- Slice tomato and dehydrate with the zucchini.
- After 4-6 hours, remove the zucchini and layer spinach, tomatoes, cucumbers, and onion on one half of the sandwich.
- Spread or pour the tahini over the other half.
- Form a sandwich and enjoy!

Tried this hoagie today and it was so tasty I’m having another for lunch tomorrow! The only exception is tomorrow I’m going to make it a ‘philly cheesesteak’ by dehydrating and adding some mushrooms. Thanks for the recipe.

I made this recipe for me and my mom and we both LOVED it. In fact she kept asking me to make it, so she was hooked. I’m not raw vegan but working towards it and a better healthier way of eating and when my sister shared this with me I decided to give it a go. I was not disappointed. Thanks!
I am new to your blogs and I am enjoying everything I am learning. I get why you dehydrate the zucchini, so its like bread. Why do you dehydrate the tomato? Just for the taste?
