Eating only once a day proved to be quite easy during Ramadan and once again shows how sustainable a raw or cooked vegan diet is throughout the days and weeks. I did have cooked potatoes and vegetables for a little more than half of the month, to more easily meet calorie needs and out of choice. I do believe I could have done fine eating once a day, and stay raw, and still maintain weight, if I chose to be so particular and meticulous. As it is, instead of one gigantic 2,500 calorie meal, I’m back to eating two large meals a day. =)
